MALAI KOFTA
Ingredients
- Dough
- Grated Paneer (Home Cottage Cheese) - 100 Gram
- Corn Starch - 1 Tablespoon
- Potatoes - 2-3 Large Boiled and Mashed
- Red Chili Powder - 1/2 Teaspoon
- Cardamom Powder - 1/4 Teaspoon
- Oil - 1/4 Teaspoon
- Salt to Taste
- For Filling
- Grated Paneer (Cottage Cheese) - 3 Tablespoon
- Chopped Nuts - 1/4 Cup
- Green Chilies (According to Taste) - 2-3 Finely Chopped
- Chopped Green Coriander - 3 Tablespoon
- Grated Ginger - 1 Tablespoon
- Sugar (Optional) - 1 Teaspoon
- Garam Masala Powder - 1/2 Teaspoon
- Lemon Juice - 2 Teaspoon
- Oil To Fry Coftas
- Gravy
- Medium Size Onions - 2 Finely Chopped
- Crushed Tomatoes - 1 1/2 Cup
- Tomato Puree - 2 Tablespoon
- Sugar (Optional) - 1 Teaspoon
- Salt to Taste
- Cumin Seeds - 1 Teaspoon
- Ginger Paste - 1 Teaspoon
- Garlic Paste - 1 Teaspoon
- Kasturi Methi (Crushed Dry Fenugreek L eaves) - 1 Teaspoon
- Cashew Paste - 3 Tablespoon (Boil 15-20 Cashew ,then take Cashew and 1/4 Cup of Water and Blend )
- Cream - 2 Tablespoon
- Crushed Red Chilies (or As Per Taste) - 1 Teaspoon
- Garam Masala Powder - 1/2 Teaspoon
- Oil - 1 Tablespoon
- Cardamom Powder - 1 Teaspoon
- Butter - 3 Tablespoon
- Garnish
- Cream,Grated Paneer and Chopped Coriander
Instructions
- Dough: In a mixing bowl add grated paneer and mash it nicely then add potatoes salt ,cardamom powder,red chili powder ,corn flour and mix it well , make a nice dough sprinkle 1/4 tsp of oil.
- Filling : Mix all the ingredients.
- Koftas : Take small portion of the dough and make it into a small balls ,make a hole into a ball and add 1 tsp of filling and close the dough nicely and roll it. In a same manner keep all the koftas ready.
- In a pan heat the oil, when oil is hot slowly drop each koftas on a medium flame and fry, turning them all the sides until they turn light brown and keep it on a paper towel.
- Gravy: Heat a wok add 1 tbsp of oil and 1 tbsp of butter,cumin seeds,ginger and garlic then saute until garlic turn light brown then.
- Add onions and saute them after cooking the onion for 3-4 minutes on medium flame .
- Add crushed tomatoes and mix well, once tomatoes become soft add tomato puree and stir nicely ,now add red chili powder,salt and mix well,cover and cook for 2-3 minutes or until the tomatoes are completely cooked,add 4-5 tbsp of water and cook it for 3-4 minutes and switch of the gas.
- When the mixture cool down blend into the mixer with 3 -4 tbsp of water to make smooth paste.
- Heat a pan add 2 tbsp butter and add the blended mixture stir for a minute.
- Add cashew paste and mix well cook for minute.
- Add 3-4 tbsp of water and mix well and let it cook for 2-3 minutes.
- Add garam masala,crushed kasturi methi and mix it well.Lastly add fresh cream.As a gravy started to boil slowly drop the koftas into gravy.
- Garnish with sprinkle of cardamom powder ,Cream ,grated paneer,chopped coriander.
