KANDE POHE(FLATTENED RICE)
Ingredients
- Thick Poha - 2 Cup
- Onion medium - 5 Cut Into Small Cubes
- Green Chilies - 5-6 Finely Chopped
- Green Coriander - 1/2 Cup Finely Chopped
- Fresh Grated Coconut - 1/2 Cup
- Oil - 2-3 Tablespoon
- Lemon Juice - From 1 Lemon
- Curry Leaves - 7-8
- Mustard Seeds - 1 Teaspoon
- Cumin Seeds - 1/2 Teaspoon
- Asofoetida (hing) - 1/2 Teaspoon
- Turmeric Powder - 1 Teaspoon
- Salt to Taste
- Sugar (Optional) - 2 Teaspoon
- Potato - 1 Medium In Small cubes
- Thin Sev - For Garnishing (optional)
Instructions
- Wash flattened rice twice under water nicely, drain out all the water and put it in a strainer for at least ten minutes
- Heat oil in a pan, then add mustard seeds, cumin seeds wait till it crackles
- Add hing, curry leaves and green chilies. Stir for one minute
- Add turmeric, potatoes and onion
- Add a little salt and saute until the onions are truculent and potato is cooked
- Now add the flattened rice a little by little while mixing thoroughly on low heat
- Add some more salt , sugar, lemon juice and mix well
- Cover and cook for 5-6 minutes on medium head
- Open and mix nicely, add some grated coconut and some chopped coriander leaves
- When you are serving decorate with chopped green coriander,grated coconut and thin sev (optional)
