GENERAL TSO'S CHICKEN
Ingredients
- For Base Sauce
- Oyster Sauce - 1/3 Cup
- Cooking Wine (White or Sherry) - 1/2 Cup
- Hoisin Sauce - 2 Tablespoon
- Soy Sauce - 1 Cup
- Dark Soy Sauce - 1 Tablespoon
- Sugar - 1/3 Cup
- Minced Ginger - 1
- Green Onions Roots (White Part) - 3-4 Chopped
- Minced Garlic - 5 Cloves
- Chicken Stock - 2 1/2 Cup
- For General Tso's Sauce :
- Sugar - 1/2 Cup
- Vinegar - 1/4 Cup
- Chili Garlic Sauce - 2 Tablespoon
- Base Sauce - 1/2 Cup
- Chicken:
- Minced Garlic - 2-3 Clove
- Boneless Chicken Thigh or apx Same Weight Chicken Breast - 5-6
- Green Onion (White Part) - 2-3 Chopped
- Salt to Taste
- White Pepper - 1 Tablespoon
- Baking Soda - 1 Teaspoon (optional for extra tenderness)
- Garlic Powder - 1/2 Tablespoon
- Egg - 1
- Broccoli - 1/2 Cup (Blanched)
- Button Mushrooms - 1/4 Cup Chopped
- White Wine - 2 Tablespoon
- Corn Starch - 1/3 Cup
- Oil - 2 -2 Tablespoon
- For Frying Oil
- Sesame Seeds - 2 Tablespoon
- Green Part of Green Onion - 2 Tablespoon Chopped
Instructions
Base sauce:
- In a pot add soy sauce,onion roots,ginger,dark soy sauce,cooking wine,sugar hoisin sauce,oyster sauce garlic and mix nicely all the mixture should be total 2 1/2 cup.
- Heat the chicken stock then add into base sauce mixture and let it set at least 20-25 minutes aside then strain the base sauce. ( this sauce you can use for stir fry chicken , lo min,chicken with broccoli or any other Chinese dish)
- For general tso's sauce:
In a bowl add sugar,vinegar,chili garlic sauce and base sauce.
- Cut the chicken thigh in small pieces take into a bowl add salt,white pepper,garlic powder,white wine,egg,baking soda,mix nicely and refrigerate for at least 30-40 minutes.
- Now remove from refrigerate add 1/3 cup of corn starch and mix it for 3-4 minutes or corn starch is coated nicely over the chicken ,now add 2 tbsp oil mix until all the oil is gone.
- In a pan heat the oil and deep fry each chicken piece separately until it turns golden brown for about 4-5 minutes or crispy.
- In a wok heat 2 tbsp oil ,garlic,and chopped green onion stir for 1-2 minute and add broccoli ,mushroom stir fry for 2 minutes add general tso's sauce #2 let it boil .
- In a 4-5 tbsp water dissolve 1 tbsp corn starch and add into boiling sauce ,once the sauce start thickening taste the sauce and if everything is fine add fried chicken and 1-2 drop of sesame oil (optional).
- Let the sauce coat over the chicken.
- Garnish with chopped green coriander and sesame seeds.
