Mushroom Risotto
Ingredients
- Onion - 1 Large In Small Cube
- Olive oil - 4 Tbsp
- Portabella Mashrooms - 10-12 Sliced
- Risotto Rice - 1-1/4 Cup
- Dry White Wine(Optional) - 1/4 Cup
- Chicken or Veg Broth - 4-5 Cup (as needed)
- Basil - 1 Tbsp Chopped
- Mascarpone cheese - 2 Tbsp
- Parmesan Cheese - 3Tbsp
- Salt - As Per Taste
- Pepper - As Per Needed
- Butter - 2 Tbsp
- Bacon - 4 Strips
Instructions
1. Heat olive oil and sauté onion until translucent.
2. Add bacon and fry till bacon crisp
3. Then add mushroom and fry for another two minutes on high heat stirring frequently.
4. Remove mixture in plate and keep aside.
5. In same pan add butter and risotto rice.
6. Toast rice for four to five minutes.
7. In rice add wine and stir constantly till the wine is absorbed.
8. Add broth In mixture little by little .
9. Stir and check if rice is cooked .
10. If rice absorb the broth and needed and more broth until the rice cooked.
11. keep the desire consistency of rice then add if needed salt , basil and pepper.
12. Add Parmesan cheese and mascarpone cheese .
13. mix and serve hot with grated parmesan cheese on top.
